The Best Watermelon Mint Summer Salad (GF)

You know I love watermelon, and what is better than a quick and simple summer salad that is absolutely delicious, and ready to serve in under 10 minutes? Enter the room, Watermelon Mint Summer Salad of my dreams.

I took a twist on the very popular watermelon-mint-feta salad and added one of my favorite ingredients, arugula, for a peppery, delicious crunch that gives it more of that traditional salad feel and still makes it taste absolutely incredible.

This salad is gluten-free, and could be dairy free if you use a dairy free feta cheese substitute, which I have done before and it has turned out delicious. You might even be able to find a delicious dairy-free goat cheese that works too. So, let me know if you try it and how it turns out!

Because I love things pretty and simple, I have included the recipe in a downloadable PDF for you here! This way, you don’t have to scroll scroll scroll and you can easily print without the added mess.

Another optional add that I have done on occasion, is adding fresh blueberries to the mix (see pictures). It was, again, delicious and highly recommended!
